🥗 Salads

  • Sea to Sky Salad – Mesclun greens, carrot, edamame, red pepper, watermelon radish, and cucumber, tossed in a miso-ginger vinaigrette. Topped with sesame-crusted ahi tuna.

  • Summer Harvest Salad – Fresh greens and arugula with roasted corn, bacon, blue cheese, cherry tomatoes, pickled onion, and crispy jalapeños in an apple-thyme vinaigrette.

  • Caesar – Romaine lettuce with parmesan and smoky bacon in a roasted garlic dressing, finished with focaccia croutons, a caperberry, and a soft-boiled egg.

  • Braised Bison Linguine – Slow-braised bison short rib over linguine with creamy white wine–ajvar sauce, roasted mushrooms, shallots, peas, arugula, chimichurri, and pumpkin seeds.

  • The Brickworks Burger – House chuck and brisket patty with truffle Dijon aioli, smoked gouda, bacon, peach chutney, and arugula. Served with crispy smashed potatoes and creamy leek dip.

  • Arctic Char – Pan-seared Arctic char in apple-tarragon beurre blanc, served with lemon basil risotto, roasted vegetables, grilled lemon, capers, and sumac.

  • Roasted Red Pepper Linguine – Pasta in creamy white wine–ajvar sauce with mushrooms, shallots, peas, arugula, chimichurri, and pumpkin seeds. Optional: add Black Tiger prawns.

  • Korean Cauliflower Bowl – BBQ-glazed crispy cauliflower with edamame, kale, peppers, carrot, shallots, and kimchi in a sesame-ginger vinaigrette over coconut cauliflower rice. Optional: add crispy Tiger prawns.

  • Braised Bison Short Rib – IPA-braised Alberta short rib served with creamed duck fat potatoes, roasted vegetables, and a rich bison jus.
